The flavor of blueberries is generally subtle and common descriptors include, sweet (but not overly sweet), floral, woody, slightly astringent (drying), and musky with a touch of soft acidity. Unripe and underripe blueberries are typically very sour. Blueberries are small but juicy and will release juice when smashed or bitten. Wild blueberries are a smaller than cultivated ones and typically have a more floral taste.
Ginger Simple Syrup: When ginger is boiled to create syrup, a derivative called shogaol is formed, which is even spicier than gingerol and will replicate the sensations of alcohol in a non-alcoholic drink. Fresh Lime Juice: Fresh lime juice has a tangy and acidic taste, with a bright and refreshing aroma. It is often described as having a slightly sweet and sour flavor, with a subtle bitterness and adds a zesty and tart flavor that can balance out sweetness and enhance the overall taste.
Habanero Tincture: A habanero tincture, made from vodka or vinegar is used in mocktails to add a touch of heat which can create a similar sensation to the “burn” of alcohol. Habanero peppers contain capsaicin, a compound that stimulates the same nerves as alcohol, giving the drink a more complex and satisfying flavor profile. Ice: Ice for mixing and serving
Muddle: Muddle the blueberries
Mix and Chill: Mix the main ingredients with ice until thoroughly mixed and chilled.
Fill: Divide the chilled mixture evenly between the ice-filled glasses.
Garnish and Enjoy: Garnish each glass fresh blueberries and a lime wedge. Cheers!

2 cups blueberry kombucha
1/4 cup fresh blueberries
2 tbsp ginger simple syrup
2 tbsp fresh lime juice
8 drops habanero tincture
2 cups ice cubes
Muddle: In a cocktail shaker or large glass, muddle the fresh blueberries and ginger simple syrup until well mashed.
Mix: Add the blueberry kombucha, fresh lime juice and habanero tincture to the shaker or glass, and stir to combine.
Fill: Fill a rocks glass with ice cubes and strain the blueberry kombucha mixture into the glass.
Garnish: Garnish each glass with a few extra fresh blueberries and a lime wedge, and enjoy your refreshing Blueberry Collins Kombucha Mocktail!
