A mocktail is similar to a cocktail, but without the alcohol. A Kombucha Mocktail features kombucha as a wash in the base of the mocktail.
There are several reasons people choose not to drink such as health, religious, or a personal preference. Kombucha mocktails are great option for those who want to enjoy a satisfying social beverage while abstaining from alcohol. Just because mocktails do not have alcohol doesn’t mean they have to be sweet, boring or unsatisfying.
Kombucha mocktails, in addition to being delicious and satisfying, also contain additional health benefits. Apart from omitting alcohol, additional benefits come from the probiotics and antioxidants in the kombucha, especially in fruit flavored kombuchas.

2. Glasses: Two glasses for serving your mocktails.
Pomegranate Kombucha: Kombucha forms the base of the mocktail
Fresh Lime: Limes are typically round or oval in shape, with a bright green color and a thin, smooth skin. It is similar in taste and appearance to a lemon, but is slightly sweeter and less acidic.
Fresh Ginger: Fresh ginger, with it’s slightly peppery and sweet taste and pungent-spicy aroma gives non-alcoholic cocktails like this a light, spicy zip that emulates the sensation you get at the back of your throat when drinking alcohol. Ginger is also good for digestion and boosting the immune system. — Look for firm ginger “hands” with a taut peel. It should not look wrinkled or feel soft
Ginger Simple Syrup: When ginger is boiled to create syrup, a derivative called shogaol is formed, which is even spicier than gingerol and will replicate the sensations of alcohol in a non-alcoholic drink. It also also adds viscosity to the drink, giving it a smooth and velvety mouthfeel that enhances its texture. Here’s how to make your own ginger simple syrup.
Pomegranate Arils (seeds) – Pomegranates are typically described as having characteristics of sour, sweet, musty/earthy, fruity with an astringent (puckering) mouthfeel. They are very similar to cranberries–fairly tart with a bit of sweetness underneath.
White Sugar: for rimming the glasses
Mix and Chill: Mix the main ingredients with ice until thoroughly and chilled.
Rim glasses: Rim the serving glasses with a cinnamon sugar mixture and fill with ice.
Fill: Divide the chilled mixture evenly between the glasses and top with apple kombucha.
Garnish and Enjoy: Garnish each glass with an apple slice, cinnamon stick and anise pod. Cheers!
Yield: 2 mocktails • Active time: 5 minutes • Total time: 5 minutes
16 ounces pomegranate kombucha
4 lime wheels
4 slices fresh ginger
2 Tbsp Pomegranate arils
2 tsp Ginger Simple Syrup
1/4 cup white sugar
Rim glasses: Rim the serving glasses with a sugar and set aside
Prepare Ingredients: Slice 4 lime wheels from a fresh lime and set two aside. slice 4 pieces of fresh ginger about 1/8″ thick
Muddle: In a cocktail shaker or large glass add the pomegranate arils, two lime wheels, ginger simple syrup and fresh ginger. Muddle with a cocktail muddler or wooden spoon until well mashed and aromatic
Mix: Add pomegranate kombucha to shaker with muddled ingredients and stir or shake for about 30 seconds until chilled
Fill: Strain the mixture into the rimmed glasses
Garnish: Garnish each glass with one of the remaining lime wheels

Rimming Glasses To sugar rim a cocktail glass, you will need a shallow dish or plate and some granulated sugar. First, moisten the rim of the glass to help the sugar stick. I like to use a piece of cut fruit that complements the drink such as lemon or lime.
Dip the moistened rim of the glass into a thin layer of sugar spread evenly on a plate, rotating the glass gently to ensure that the sugar adheres evenly to the rim.
Once the rim is coated with sugar, gently tap the glass to remove any excess sugar that may be loose. Allow the glass to sit while you make the drink to allow the sugar time to set.
